Oven-Baked 4-Ingredient Potato Au Gratin Cups

These little potato cups are crispy on the outside, creamy and cheesy inside, and require just 4 main ingredients.

Ingredients

  • 3–4 medium potatoes, peeled
  • 1 cup shredded Gruyère or cheddar cheese
  • ¾ cup heavy cream
  • 2 tbsp butter
  • Salt and black pepper, to taste (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin generously with butter.
  2. Slice the potatoes very thinly—about ⅛ inch (3 mm). A mandoline makes this much easier.
  3. Layer the cups. Place a few potato slices in each muffin cup, sprinkle with a little cheese, then repeat until each cup is nearly full.
  4. Add cream. Pour about 1 tablespoon of heavy cream into each cup. Season lightly with salt and pepper if desired.
  5. Bake for 35–45 minutes, until the potatoes are tender and the tops are deeply golden and bubbling.
  6. Rest for 5–10 minutes before removing the potato cups with a small spatula or butter knife.

 Tip for extra-crispy edges

Brush the muffin cups with plenty of butter and make sure a few potato slices extend slightly above the rim. They’ll crisp beautifully as they bake.
