Ingredients
- 8 oz (225 g) cream cheese, softened
- 1½ cups shredded sharp cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 1 cup pimentos, drained and chopped
- ½ cup mayonnaise
- 2 green onions, thinly sliced
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper, optional
- Salt and black pepper, to taste
Instructions
- Heat the oven to 375°F (190°C).
- In a bowl, beat the softened cream cheese and mayonnaise until smooth.
- Stir in the cheddar, Monterey Jack, pimentos, green onions, garlic powder, smoked paprika, and cayenne. Season with salt and pepper.
- Transfer to a small baking dish and spread evenly.
- Bake for 20–25 minutes, until hot, bubbling, and lightly golden on top.
- For an extra-browned top, broil for 1–2 minutes, watching closely.
- Serve immediately with crackers, toasted baguette slices, tortilla chips, celery, or bell-pepper strips.
