tasty Chicken Pot Pie Noodle Skillet

 

Ingredients:

  • 2 tablespoons olive oil or butter
  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 1/2 cups frozen peas
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary (optional)
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth (or use low-sodium)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 8 oz egg noodles (or any pasta you prefer)
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese (optional, for extra creaminess)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Chicken:
    • Heat the olive oil or butter in a large skillet over medium heat. Add the diced chicken and season with salt, pepper, and thyme. Cook for about 5-7 minutes, until the chicken is cooked through and browned on the outside. Remove the chicken from the skillet and set aside.
  2. Sauté the Veggies:
    • In the same skillet, add the onion, garlic, carrots, and celery. Cook for 4-5 minutes, until the vegetables are softened.
  3. Make the Sauce:
    • Sprinkle the flour over the vegetables and stir to combine, cooking for 1-2 minutes to remove the raw flour taste.
    • Gradually add the chicken broth while stirring to avoid lumps. Stir in the heavy cream and bring the mixture to a simmer. Let it cook for 3-4 minutes, until the sauce thickens slightly.
  4. Cook the Noodles:
    • While the sauce is thickening, cook the egg noodles in a separate pot according to the package instructions, then drain and set aside.
  5. Combine:
    • Add the cooked chicken, peas, and cooked noodles into the skillet with the creamy sauce. Stir to combine and heat through. Adjust seasoning with salt and pepper.
  6. Optional Cheese:
    • If you’re adding cheese, sprinkle the shredded cheddar cheese on top and stir it in until melted and creamy.
  7. Serve:
    • Once everything is well combined and heated through, garnish with fresh parsley if desired. Serve hot and enjoy!
