Ingredients:
2 cups sweet potatoes, cooked and mashed (about 3 medium)
1 ½ cups sugar
2 tablespoons flour
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup (1 stick) butter, melted
2 eggs, beaten
¾ cup evaporated milk
1 teaspoon vanilla extract
1 unbaked 9-inch pie crust
Instructions:
Preheat Oven: Set your oven to 350°F (175°C).
Prepare the Filling: In a large bowl, combine mashed sweet potatoes, sugar, flour, salt, cinnamon, and nutmeg. Mix well.
Add Wet Ingredients: Stir in melted butter, beaten eggs, evaporated milk, and vanilla extract. Mix until smooth.
Fill the Crust: Pour the sweet potato mixture into the unbaked pie crust, spreading evenly.
Bake: Place the pie in the oven and bake for 50-60 minutes or until the center is set and a toothpick comes out clean.
Cool & Serve: Let the pie cool before slicing. Serve with whipped cream or a sprinkle of cinnamon sugar.
