Smoky Smoked sausage and Potato Bake

Ingredients

  • 1 lb (450g) smoked sausage, sliced into rounds
  • 4 medium potatoes, chopped into bite-sized chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • Salt to taste
  • Optional: shredded cheese, chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep your ingredients: Wash and chop the potatoes, slice the sausage, and dice your veggies.
  3. In a large bowl, combine sausage, potatoes, peppers, and onions. Drizzle with olive oil and season with smoked paprika, garlic powder, pepper, and salt. Toss everything well to coat.
  4. Spread the mixture evenly on a large baking sheet or in a casserole dish.
  5. Bake for 35–40 minutes, stirring halfway through, until the potatoes are tender and golden.
