Instructions:
Preheat the oven: Set the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
Mix dry ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
Mix wet ingredients: In a separate large bowl, beat together the sugar, eggs, and applesauce until smooth. Stir in the crushed pineapple and vanilla extract.
