Ingredients:

Instructions:

1. Prepare the Meatloaf:

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper.
  • Mix until well combined.
  • Grease a muffin tin and evenly divide the meat mixture into the muffin cups, pressing it down lightly.
  • Bake in the preheated oven for 20-25 minutes or until the meat is fully cooked (internal temperature should be at least 160°F).
  • Once done, remove from the oven and let them cool slightly.

2. Make the Whipped Potatoes:

  • While the meatloaf cupcakes are baking, boil the potato chunks in salted water until soft (about 10-12 minutes).
  • Drain the potatoes and mash them with butter, milk, salt, and pepper until smooth and fluffy.
  • If you want a really smooth texture, you can use a hand mixer or stand mixer to whip the potatoes for extra fluffiness.

3. Assemble the Cupcakes:

  • Once the meatloaf cupcakes have cooled slightly, pipe the whipped potatoes on top using a piping bag (or just spoon it on if you don’t have one).
  • You can use a large star tip to create a frosted, cupcake-like effect.
  • Add a little drizzle of ketchup on top, if desired, for extra flavor and visual appeal.

4. Serve:
