Famous Red Lobster Shrimp Scampi

Ingredients:

  • 1 lb large shrimp (peeled and deveined)
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 garlic cloves (minced)
  • 1/4 teaspoon red pepper flakes (optional for a little heat)
  • 1/2 cup white wine (or chicken broth as a substitute)
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste
  • 1/2 lb linguine or pasta of choice
  • Grated Parmesan cheese (optional, for garnish)

Instructions:

  1. Cook the Pasta:
    • Begin by cooking the linguine (or pasta of your choice) according to the package directions. Drain and set aside.
  2. Cook the Shrimp:
    • In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
    • Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, add the remaining butter. Once melted, add the garlic and sauté for 1-2 minutes until fragrant.
    • Add the red pepper flakes (if using), white wine (or chicken broth), and lemon juice. Stir and let it simmer for 2-3 minutes, allowing the flavors to meld together.
  4. Combine:
    • Return the cooked shrimp to the skillet and toss them in the sauce to coat.
    • Add the cooked pasta and toss everything together, ensuring the pasta is well coated in the garlic butter sauce.
  5. Serve:
    • Sprinkle the dish with chopped parsley and grated Parmesan cheese (if desired).
