Easy Peach Dumplings

 

Ingredients:

  • 2 fresh or canned peaches, peeled and sliced
  • 1 package refrigerated crescent roll dough (8-count)
  • 1/4 cup unsalted butter (1/2 stick)
  • 1/2 cup sugar
  • 1 tsp ground cinnamon
  • 1/2 cup Sprite or lemon-lime soda (or any citrus soda)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the Peaches:
    • If using fresh peaches, peel and slice them into wedges. If using canned peaches, drain them well.
    • For each peach, wrap one crescent roll dough triangle around a slice, making sure to pinch the edges to seal the dough around the peach.
  3. Arrange the Dumplings:
    • Place the wrapped peach dumplings into a lightly greased 9×9-inch or similar baking dish.
  4. Make the Syrup:
    • In a small saucepan, melt the butter over medium heat.
    • Stir in the sugar and cinnamon, and cook for a couple of minutes until combined and slightly bubbly.
    • Remove from heat and pour the butter mixture over the dumplings in the baking dish.
  5. Add the Soda:
    • Pour the Sprite (or your choice of lemon-lime soda) around the edges of the dumplings in the dish. The soda will create a bubbly, sweet syrup while baking.
  6. Bake:
    • Bake for 30-35 minutes, or until the dumplings are golden brown and the syrup is bubbling.
  7. Serve:
    • Let the dumplings cool slightly before serving. They can be enjoyed as is or with a scoop of vanilla ice cream or whipped cream on top.
