Cinnamon Roll French Toast Roll-Ups

Ingredients (for the Roll-Ups):

  • 6 slices of sandwich bread (white or whole wheat, crusts removed)
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the French Toast Coating:

  • 2 large eggs
  • 1/4 cup milk (you can use any kind you prefer)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Directions:

  1. Prepare the Bread:
    • Lay the slices of bread on a flat surface and use a rolling pin to gently flatten each slice. This helps with rolling them up.
  2. Cinnamon Sugar Mix:
    • In a small bowl, combine the granulated sugar and cinnamon. Mix well and set aside.
  3. Spread Butter:
    • Spread a thin layer of softened butter over one side of each slice of flattened bread.
  4. Cinnamon Sugar Coating:
    • Sprinkle the cinnamon-sugar mixture evenly over the buttered side of each slice.
  5. Roll Up the Bread:
    • Carefully roll each slice of bread into a tight cylinder, starting from one edge.
  6. Prepare the Egg Mixture:
    • In a shallow dish, whisk together the eggs, milk, vanilla extract, and a pinch of salt.
  7. Coat the Roll-Ups:
    • Heat a skillet or griddle over medium heat and add a bit of butter or oil to prevent sticking.
    • Dip each cinnamon roll-up into the egg mixture, making sure it’s fully coated, then place it on the skillet.
  8. Cook:
    • Cook each roll-up for 2-3 minutes on each side, or until golden brown and crispy. Make sure to turn them gently to avoid unrolling.
  9. Serve:
    • Once cooked, remove the roll-ups from the pan and place them on a plate. You can sprinkle more cinnamon sugar on top or drizzle with maple syrup for an extra touch.
