Ingredients:
• For the Peanut Caramel Layer:
• 1 cup unsalted peanuts (roasted or raw, depending on preference)
1 cup granulated sugar
• 1/2 cup unsalted butter
• 1/2 cup heavy cream
• 1/4 teaspoon vanilla extract
• A pinch of salt (optional)
• For the Chocolate Layer:
• 1 1/2 cups semi-sweet chocolate chips
• 2 tablespoons unsalted butter
Instructions:
1. Prepare a baking dish: Line an 8×8-inch baking pan with parchment paper or grease it lightly for easy removal later.
2. Caramel Peanut Layer:
• In a medium saucepan, melt the butter over medium heat.
• Stir in the sugar and cook, stirring constantly, until the mixture turns a golden brown and starts to thicken (about 5-7 minutes).
• Slowly add the heavy cream while stirring (be careful as it may bubble up). Keep stirring until smooth.
• Add vanilla extract and a pinch of salt, and stir in the peanuts.
• Pour the peanut caramel mixture into the prepared baking dish and spread it evenly. Let it cool and set for about 30 minutes.
3. Chocolate Layer:
• In a microwave-safe bowl, melt the chocolate chips and butter together in 20-30 second intervals, stirring between each, until smooth and fully melted.
• Pour the melted chocolate over the cooled caramel peanut layer, spreading it evenly to cover the top.
4. Chill: Place the bars in the refrigerator for about 1-2 hours, or until the chocolate has fully set.
5. Serve: Once set, cut the bars into squares and enjoy!
