Ham and Cheese Fluffy Muffins

 

Ingredients:

  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 2 large eggs
  • ¾ cup milk
  • ¼ cup melted butter
  • 1 teaspoon Dijon mustard (optional)

Directions:

  1. Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder.
  3. In a separate large bowl, beat the eggs. Then add the milk, melted butter, and Dijon mustard, mixing until well combined.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  5. Gently fold in the diced ham and shredded cheddar cheese until evenly distributed.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18–20 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
