Ingredients:
- 1 cup diced ham
- 1 cup shredded cheddar cheese
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 2 large eggs
- ¾ cup milk
- ¼ cup melted butter
- 1 teaspoon Dijon mustard (optional)
Directions:
- Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder.
- In a separate large bowl, beat the eggs. Then add the milk, melted butter, and Dijon mustard, mixing until well combined.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Gently fold in the diced ham and shredded cheddar cheese until evenly distributed.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18–20 minutes, or until the tops are golden and a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
