Sweet & Savory Honey Bacon Roasted Potatoes

Ingredients:
4 medium potatoes, cubed
4 slices of bacon, chopped
2 tablespoons honey
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:

Preheat the oven: Preheat the oven to 400°F (200°C).
Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon fat in the pan.
Prepare the Potatoes: Toss the cubed potatoes in the olive oil, honey, garlic powder, paprika, salt, and pepper.
Roast the Potatoes: Spread the potatoes evenly on a baking sheet. Drizzle the bacon fat over them and place the sheet in the oven. Roast for 30-35 minutes, flipping halfway through, until the potatoes are golden and tender.
Add the Bacon: In the last 5 minutes of roasting, sprinkle the crispy bacon over the potatoes. Continue roasting until everything is well combined.
Serve: Garnish with fresh parsley before serving.
