Ingredients:
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup powdered sugar
2 1/2 cups shredded sweetened coconut
1/2 cup sweetened condensed milk
12 oz semi-sweet or white chocolate chips
1 tablespoon coconut oil or shortening (optional)
Instructions:
Mix shredded coconut, condensed milk, vanilla extract, salt, and powdered sugar in a large bowl until a sticky dough forms.
Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the refrigerator for 30-45 minutes to firm up.
Melt the chocolate chips with the coconut oil (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until smooth and melted.
Dip the chilled coconut balls into the melted chocolate, coating them completely. Place them back onto the parchment-lined baking sheet.
Allow the chocolate to set at room temperature, or chill the balls in the refrigerator for 10-15 minutes until firm.
Serve immediately or store in an airtight container in the refrigerator for up to one week.
