Slow Cooker Pepper Steak

Ingredients:

• 1 1/2 pounds flank steak or sirloin, sliced thin against the grain

• 2 tablespoons olive oil

• 1 medium onion, sliced

• 2 bell peppers (red, green, or yellow), sliced

• 3 cloves garlic, minced

• 1/4 cup soy sauce (or tamari for gluten-free)

• 1/4 cup beef broth

• 2 tablespoons oyster sauce (optional, for added flavor)

• 1 tablespoon brown sugar

• 1 teaspoon ground ginger (optional)

• 1 teaspoon black pepper

• 1 tablespoon cornstarch (for thickening)

• 2 tablespoons water

Instructions:

1. Sear the Steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the thinly sliced steak and sear for 2-3 minutes on each side, until browned. (This step is optional, but it adds great flavor). Remove the steak from the skillet and set it aside.

2. Prepare the Slow Cooker: Add the onions, bell peppers, and minced garlic to the slow cooker. Layer the seared steak on top of the vegetables.

3. Make the Sauce: In a small bowl, whisk together the soy sauce, beef broth, oyster sauce, brown sugar, ground ginger, and black pepper. Pour the sauce over the steak and vegetables in the slow cooker.

4. Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the steak is tender and the vegetables are softened.

5. Thicken the Sauce: Once the cooking time is complete, mix the cornstarch and water in a small bowl to make a slurry. Stir the slurry into the slow cooker, then cover and cook for an additional 20-30 minutes on high to thicken the sauce.

6. Serve: Once the sauce has thickened, give everything a good stir and taste for seasoning, adjusting salt or pepper if needed. Serve the Slow Cooker Pepper Steak over steamed rice or noodles.
